Turkish Delight...and (Virtual) Istanbul's Marketplace

Turkish Delight...now winging its way, my way. I have never tasted this "Sweet of Narnia", and am looking forward to trying it.

Also found this recipe. Since I don't know what it is suppose to taste like yet, I will try making it later on.

Traditional Turkish Delight  (Lokum)

2 cups sugar

1/2 litre water

1/2 tsp lemon juice

1/2 cup cornstarch

1/2 tsp cream of tartar

1 tablespoon rosewater flavouring

red food colouring

1/2 cup confectioner sugar

(...pistachio, almond, hazelnuts or walnuts optional...)

Dissolve sugar into water over heat...add cornstarch...add cream of tartar and boil together until thick stirring constantly.

Add rosewater and food colouring to desired tint.

Add nuts if you are using them.

Line a shallow dish or pan and pour mixture into it. Refrigerate overnight.

Remove the next day and cut into small squares. Dust each square with powdered sugar.

Enjoy!

Sounds fairly straight ahead.

In Istanbul's Turkish Marketplace not only do you find assorted flavours of Turkish Delight, but also baskets and baskets of herbs, cheeses, spices, nuts, figs and dates.
