Cuban Cuisine: Ropa Vieja & Moros y Cristianos


As if white beaches, vintage autos, constant warm temperatures, and turquoise blue water isn't enough...

There is also The Food.

The kitchen smells like Cuba tonight!

Ropa Vieja

A less tender cut of beef simmered with diced tomatoes, green peppers, garlic, yellow onion, and seasoned with chii powder, cumin and course black pepper.

When tender shredded and served.

This works wonderfully in a crock-pot.

If you are looking for something to do with any less tender piece of beef...this recipe is for you.

Delicious.

Moros y Cristianos

Is white rice simmered with black beans (the name means Moors and Christians) Add yellow chopped onion, a bay leaf, oregano, cumin, chili powder, green pepper (and hot pepper if desired)  and a little chopped bacon. Simmer until rice and beans are tender. This smells incredible while cooking, and tastes even better.

Although there are many Cuban Recipes and Sandwiches these two are a staple in most Cuban Restaurants (and homes).
